BD'3C

It's always a pleasure to work with a new producer and so we are thrilled to welcome Bourgeois-Diaz from the Vallée de la Marne in Champagne. The BD'3C is a blend of all the domaine's parcels, in proportion to the surface of vines planted. So we have: 40% Pinot Noir, 35% Pinot Meunier, 25% Chardonnay. Pressed by hand in a beautiful 100 year-old Coquard press, then aging 24 months on lees, half in oak, half in steel, before disgorgement. No dosage. 10mg/l of sulphur added at bottling. 

This is a wonderfully pure and complex Champagne, with a great depth of fruit, minerality, and background richness. Superb.
