Pinot Gris given a quick 24-hour bath on its skins, before aging in both barrel and tank. This is pale gold in the glass; the warm, ripe vintage yielding extra colour. Expect white peach, peach stone, peach pudding, pear, Manuka honey, some smokey minerality, and more. A wine with body, texture, complexity, and incredible length, which will continue to develop for years to come. Named after Xavière's husband Michel. Zero additions. Pure wine.
