Extra Brut 2021

Champagne method Chenin Blanc from Vouvray. Fruit from a parcel on limestone, near the cliffside, where's it's much drier and there's very little topsoil. This means the vines produce less, but more concentrated, fruit. Fermented and aged 9 months in 20-year-old barrels on the full lees, then aged 2 years in bottle. Zero added sulphur.

A much fuller Vouvray that the Notre Method. This is a ripper: rich, elegant, complex, and long, with plenty of years ahead of it.
